Meal Planning (w/c January 26, 2014)

It was a long weekend with Australia Day on Sunday, so I’m a bit late with this post.  I’ve posted a couple of new recipes this week – one for breakfast and one for lunch. Last week’s draft meatball recipe will need a redo as the sauce was too watery with the addition of the zucchini in the Thermomix basket so it hasn’t made it to the blog this week.

This week’s breakfast is a new recipe with smoked salmon, baby spinach and tomatoes in a wrap made with egg.  The recipe can be found here.

For lunch on Tuesday and Wednesday, I’ve a got a salad made with steamed chicken, green beans, spinach and cherry tomatoes.  The recipe is here.

Wednesday’s dinner and Thursday’s lunch is a redo of a steamed prawn recipe that I tried last year.  The prawns are marinated in garlic, lime juice and chilli and steamed in the Varoma with some vegetables.  The draft recipe is below.

Thursday night will be the Asian steamed fish recipe with Asian greens and peas cooked in the Varoma at the same time.  The recipe can be found here.

Draft Recipe:

Lime, Garlic & Chilli Prawns & Vegetables

Ingredients

600g raw prawns, peeled but with the tail on

2 cloves garlic, peeled and minced

2 tbsp lime juice

1/2 – 1 tsp chilli flakes

1 bunch asparagus, cut in half

4 cups broccoli florets

2 tbsp extra virgin olive oil (to serve)

Instructions

1. In a mixing bowl, combine prawns, garlic, lime and chilli together

2. Put 500g of water into the Thermomix bowl

3. Cut a piece of wax or baking paper to cover the Varoma tray and scrunch it up

4. Put the paper on the Varoma tray, put the prawns on top and pull the sides of the paper up to catch any juices when steaming

5. Put the lid on the Thermomix, assemble the Varoma and place it on top

6. Cook for 7 minutes/Varoma/Speed 2

7. Put the vegetables in the Varoma bowl, reassemble the Varoma and cook for a further 4 minutes/Varoma/Speed 2

8. Drizzle with olive oil to serve
