Meal Planning (w/c March 23, 2014)

I had a couple of disasters in the kitchen so I didn’t get to post anything last week.  This week, I’ve posted a recipe for massaman beef curry and I’ve redone the lasagna recipe.  We’ve got visitors in town this week, so I won’t get a chance to do much cooking and I won’t be able to get a post up next week – will see you in a couple of weeks…

For breakfast this week, I’m going with the cashew nut butter on an English muffin.  It’s easy to make and a very tasty way to start the day.  The recipe can be found here.

Lunch on Monday and Tuesday will be a redo of the lasagna recipe.  This new version is packed with flavor and lots of vegetables to offset the unhealthiness of the cheese!  The new recipe can be found here.

We are out to dinner on Monday and Wednesday night, so Tuesday’s dinner will be the standard pan-fried steak meal with sautéed onion and asparagus and sugar snap peas cooked on the grill pan while the steak rests.

Wednesday and Thursday’s lunch will be one of our new favourites – the chicken and vegetables with miso pesto.  We love this pesto and it lifts an otherwise boring combination of steamed chicken and vegetables to something really tasty.  The recipe is here.

Thursday’s dinner will be a crispy skin salmon.  I’ll serve it with steamed snow peas and broccoli.  The salmon is cooked in the Varoma and finished off in a frying pan based on this recipe.
