Cauliflower Cheese with Kale

Course Side Dish
Servings 4 serves

Ingredients
  

  • 1 large head cauliflower approx. 850g when trimmed, chopped into florets
  • 1/2 bunch kale chopped into 2cm pieces
Cheese Sauce
  • 60 g light olive oil
  • 40 g self-raising flour
  • 650 g reduced fat (2%) milk
  • 250 g light tasty cheese cut into 2cm pieces
  • 1 tsp Dijon mustard
  • Salt and pepper to season

Instructions
 

  • Put the cheese into the Thermomix bowl and grate for 6 seconds | Speed 8; remove to a bowl
  • Put cauliflower into the Varoma bowl and assemble (without the tray)
  • Rinse Thermomix bowl, add 600g of water into the bowl and close the lid
  • Put the Varoma on top of the Thermomix and steam for 15 minutes | Varoma | Speed 4
  • When the timer finishes, take the Varoma off the Thermomix and toss the cauliflower around the bowl to mix
  • Put the kale into the Thermomix basket, put in the Thermomix, add the Varoma and steam for another 5 minutes | Varoma | Speed 4
  • Remove the Varoma and the basket and empty the water from the bowl
  • Turn the grill on in the stove
  • Add the oil, flour, milk, salt and pepper into the Thermomix bowl and with the measuring cup (MC) on, cook for 8 minutes | 90C | Speed 4
  • Add 100g of the cheese and mustard into the bowl and cook for 2 minutes | 90C | Speed 3
  • Put cauliflower and kale into a large rectangular roasting dish, mix together and top with cheese sauce; making sure all of the vegetables are covered
  • Sprinkle with remaining cheese
  • Put roasting dish into the oven and grill until golden brown
