Cauliflower and Cannellini Bean Soup

Have you ever bought a whole cauliflower for a dish and ended up with loads of extras?  When this happens, one of the easiest ways to use up your leftover cauliflower is to turn it into soup.  Soup is also a great way to quickly get a lot of veggies into your diet.  

In this recipe, I’ve included some cannellini beans for protein.  The addition of potatoes and milk give the soup a creamier texture.  As usual, the Thermomix makes cooking this soup easy – with time to clean up while it cooks!

Cauliflower and Cannellini Bean Soup

Course Soup
Servings 2 litres

Ingredients
  

  • 1 large onion peeled and quartered
  • 1 clove garlic
  • 20 g light olive oil
  • 1 tbsp coriander powder
  • 1 tbsp cumin powder
  • 600 g cauliflower cut into florets
  • 150 g potato peeled, diced into 3cm cubes
  • 400 g can cannellini beans drained
  • 20 g Thermomix vegetable stock concentrate
  • 400 g water
  • 200 g milk
  • Salt and pepper to season

Instructions
 

  • Add onion and garlic to the Thermomix bowl for 3 seconds | Speed 5
  • Scrape down the side of the bowl, add oil and sauté with measuring cup (MC) off for 3 minutes | Varoma | Speed 1
  • Add cauliflower, cumin, coriander and sauté with the MC off for 6 minutes | Varoma | Speed 1
  • Add potato, beans, stock, water, milk, salt, pepper and cook with MC off for 20 minutes | 100C | Speed 1
  • Blend with MC on for 1 minute – slowly going from Speed 1 to 8
