Pork Chops and Vegetables with Apple Sauce

Pork chops seem like one of those old-fashioned dishes that our parents and grandparents used to eat.  Generally, they were  overcooked (to avoid food poisoning), which made it tough and dry – not appealing at all!  The upshot is that I had never cooked a pork chop before I came up with this recipe.    

After a bit of research, I discovered that steaming is actually a great way to keep pork moist.  Enter the Thermomix.  The Varoma tray is just the right size to hold 4 decent-sized pork chops.  Of course, pork isn’t the same without applesauce, which also falls within the Thermomix wheelhouse.  The Thermomix chops, cooks and stirs the apples to make the sauce.   

This recipe allows you to cook the apples, vegetables and meat – all at the same time – for an easy one-pot meal.  The final result is a complete meal with tender and flavourful pork.  With the Thermomix, there’s no need to be afraid of cooking pork anymore!

Pork Chops and Vegetables with Apple Sauce

Steam pork chops in the Thermomix Varoma and use it to cook vegetables and applesauce too!

Ingredients
  

  • 4 250g pork loin chops; bone in and fat trimmed
  • 2 carrots peeled and cut into 1cm pieces
  • 2 cups broccoli florets
  • 2 cups frozen peas
  • Marinade
  • 2 tbsp apple cider vinegar
  • 2 tsp dijon mustard
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper
  • Apple Sauce
  • 2 apples peeled, cored and quartered
  • 1 tbsp lemon juice
  • 100 g water
  • 1/2 tsp ground cinnamon

Instructions
 

  • Combine pork chops and marinade ingredients in a mixing bowl and set aside for 15 minutes
  • Put apples into the Thermomix bowl and chop with the measuring cup (MC) on for 3 seconds | Speed 4
  • Scrape down the sides of the bowl, put the remaining apple sauce ingredients into the Thermomix and close the lid
  • Put carrots into the Varoma bowl
  • Line the Varoma tray with wax or baking paper and place pork chops on top
  • Assemble the Varoma and cook for 15 minutes | Varoma | Speed 1
  • Add broccoli and peas into the Varoma bowl, reassemble the Varoma and cook for a further 5 minutes | Varoma | Speed 1 (or until pork chops are cooked)
  • Remove the Varoma, put the MC on the Thermomix and blend the apple sauce for 20-30 seconds | Speed 6
