Irish Brown Bread

A friend of mine introduced me to Irish brown bread.  In one of his jobs, he had to bake six loaves a day so he could make it without a recipe!  This lovely bread is a heavy, nutty loaf and is delicious when toasted and served with butter. This recipe conversion for the Thermomix and is based on this recipe from the Irish Food Board.  I’ve modified it to make it more like the one that I remember.

Irish Brown Bread

Servings 1 loaf

Ingredients
  

  • 250 g whole wheat
  • 200 g plain white flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 330 g buttermilk store-bought
  • 1 egg

Instructions
 

  • Preheat oven to 200C and grease a loaf pan with vegetable oil
  • Put whole wheat into the Thermomix bowl and mill for 1 minute | Speed 9
  • Scrape down the sides, add remaining ingredients into the bowl and mix together for 5 seconds | Speed 7 – the mixture should be like a soft dough
  • Pour into the loaf pan and even out on the top
  • Bake in the centre rack for about 40-45 minutes or until a toothpick inserted in the centre comes out clean
  • Remove from the tin and wrap in a tea towel to cool

Notes

  1. Store-bought buttermilk is thicker than the buttermilk you get from making butter from cream.  For this recipe, the store-bought stuff stops the dough from being too runny.
