Chicken Drumsticks with Eggplant and Lentils

I wanted to come up with a recipe that would make use of the Varoma to cook chicken and a suitable vegetable to go with it.  The eggplant and lentil mixture is a Thermomix conversion of an Eggplant and Lentil Salad from a recipe book I have called Meals Made Easy (Murdoch Books, 2010).

Chicken Drumsticks with Eggplant and Lentils

Cook eggplant and lentils in the Thermomix bowl to make a tasty side - while steaming chicken in the Varoma.

Ingredients
  

  • 1 small red onion peeled and quartered
  • 3 cloves garlic peeled
  • 40 g light olive oil
  • 300 g eggplant halved lengthwise then cut into 0.5cm pieces
  • 1/4 tsp ground cumin
  • 200 g puy (French) lentils rinsed
  • 35 g Thermomix vegetable stock concentrate
  • 350 g water
  • 1/2 bunch flat leaf parsley leaves only, roughly chopped
  • 20 g red wine vinegar
  • 20 g extra virgin olive oil
  • 8 chicken drumsticks
  • Salt and pepper to season

Instructions
 

  • Put onion into the Thermomix bowl and chop for 4 seconds/Speed 5
  • Scrape down the sides of the bowl, add cumin and 20g of oil and cook with the measuring cup (MC) off for 2 minutes | Varoma | Speed 1
  • Add eggplant and cook with the MC off for 5 minutes | Varoma | Reverse | Speed soft
  • Remove to a Thermoserver to keep warm
  • Put garlic into the Thermomix and chop for 3 seconds | Speed 5
  • Scrape down sides, add remaining oil and cook with MC off for 1 minute | 100C | Speed 1
  • Arrange chicken in the Varoma bowl and tray, season with salt and pepper and assemble
  • Add lentils, stock and water into the Thermomix bowl, put the Varoma on top and cook for 25 – 30 minutes | Varoma | Reverse | Speed soft (or until juices in the chicken run clear)
  • Remove Varoma, add eggplant mixture, parsley, vinegar and extra virgin olive oil into the Thermomix bowl and mix together for 1 minute | Reverse | Speed soft; using the spatula to help combine the contents
