Sausages with Cauliflower and White Bean Purée and Peas

Ingredients
  

  • 500 g water
  • 1/2 head cauliflower cut into florets (~500g of florets)
  • 400 g can cannellini beans rinsed and drained
  • 800 g thick sausages
  • 1 large onion
  • 20 g olive oil
  • 1 tbsp Thermomix vegetable stock concentrate
  • 20 g water
  • 50 g reduced fat milk
  • Salt & pepper to season
  • 2 cups frozen peas

Instructions
 

  • Put 500g water into the Thermomix bowl and close the lid
  • Put cauliflower and beans in the Varoma bowl and sausages on the tray and cook for 20 minutes | Varoma | Speed 1
  • Remove Varoma and empty water from the Thermomix
  • Put onion in the Thermomix bowl and chop for 4 seconds | Speed 5
  • Scrape down the sides of the bowl, add oil into the Thermomix bowl and sauté with the measuring cup (MC) off for 2 minutes | 100C | Speed 1
  • Put cauliflower, beans, stock, water, milk, salt and pepper into the Thermomix bowl and close the lid
  • Put peas into the Varoma bowl, assemble the Varoma and put on top of the Thermomix
  • Cook for 5-10 minutes | Varoma | Speed 1; extend cooking time if sausages are not cooked through
  • Remove the Varoma, put the MC on the Thermomix and purée for 1 minute – going slowly from Speed 1 to Speed 8
