Steamed Prawn Dumplings

Dumplings have got to be right up there on my list of favourite foods.  I’m not talking about the scone-like dough ones that you often find in soups and stews.  I’m talking about the ones with delicious fillings covered in a flour or rice-based wrapper.

Dumplings can be intimidating – fiddly to make and also time consuming.  This recipe tries to simplify this.  The filling is made in the Thermomix bowl and then the dumplings are steamed in the Varoma and served with a simple dipping sauce.  The result is lovely soft pillows of prawn goodness!

Steamed Prawn Dumplings

These delicious prawn dumplings are relatively quick to make. I've used the Thermomix to make the filling and then to steam the finished dumplings.

Ingredients

  • 500 g raw prawn cutlets
  • 2 spring onion stalks cut into 2cm pieces
  • 2 cloves garlic peeled
  • 1 tsp minced ginger
  • 1 tbsp corn flour
  • 1 tbsp soy sauce
  • 1 tsp rice wine vinegar or apple cider vinegar
  • ~38 wonton wrappers
Sauce
  • 2 tbsp soy sauce
  • 4 tbsp rice wine vinegar
  • 2 tsp sesame oil
  • Red chili thinly sliced (optional)

Instructions

  • Add spring onion, garlic and ginger into the Thermomix bowl and chop for 3 seconds | Speed 5
  • Scrape down the sides, add prawns and cornflour and chop for 4 seconds | Speed 4
  • Remove mixture to a bowl
  • Add soy sauce and rice wine vinegar to the mixture and combine with the spatula
  • Lay a Thermomat or silicon baking sheet on the counter and spread out the wonton wrappers (you will have to do this in batches)
  • Put 1 tsp of prawn mixture into the centre of each wonton wrapper
  • To make the wontons, use your finger to brush the edge of one half of the wrapper with a bit of water; fold the wrapper in half – squeezing out any air
  • Place wontons into the Varoma bowl and tray; making sure they don’t touch each other
  • Add 500g water into the Thermomix bowl, close the lid, assemble the Varoma and cook for 12 minutes | Varoma | Speed 2
  • Mix sauce ingredients together to serve
