Steamed Fish and Vegetables with Dijon and Lemon Sauce

I love steaming fish.  It keeps the fish moist and it’s really difficult to overcook it this way.  The cooking time depends on the thickness of the fish.  The fish I used below was about 1cm thick.   You can use different vegetables though some might take less or more time to cook than the fish.

Steamed Fish and Vegetables with Dijon and Lemon Sauce

Fish and vegetables steamed in the Thermomix Varoma. This dish is finished with a dijon and lemon sauce made using a stick blender.

Ingredients
  

  • 300g filets of white fish (cut into 2x150g pieces) I used sea bream
  • 2 cups broccoli florets
  • 1 cup frozen peas
  • 500 g water
  • Salt
  • Pepper
Sauce
  • 1/3 cup light olive oil
  • 2 tbsp lemon juice
  • 1/2 tbsp Dijon mustard
  • Salt and pepper to season

Instructions
 

  • Put vegetables in the bottom of the Varoma and the fish on the top tray
  • Put water in the Thermomix bowl, close lid and assemble Varoma on top
  • Steam for 10 minutes | Varoma | Speed 1
  • Check fish and vegetables – steam for another 1 to 2 minutes depending on the thickness of the fish
  • While fish is cooking, make the sauce by putting all of the ingredients in a measuring jug or cup and use a hand mixer to blend together – approximately 1 minute | Turbo | Speed 6 – until it emulsifies into a dressing. Pour over fish to serve

Notes

  1. Make it easier to wash up afterwards - put the fish on a scrunched up piece of wax paper that has been soaked with water
