My parents used to own a sandwich store in a busy downtown office building in Canada. We used to hang out there over the school holidays and I remember a delicious broccoli soup on the menu. I imagine it was that way because of the lashings of cream and salt in the ingredients. Whatever it was, it’s one of the few dishes that I remember from those days – and as a food memory, it deserves its time in the limelight.
These days, soups are an easy and tasty way to pack in the vegetables. This recipe actually makes mushy broccoli taste good! To lighten it up, I use potato and milk instead of cream.
Smooth and creamy soups are the staple for the Thermomix. A ‘one-pot’ dish that requires no extra equipment – it’s a no brainer. If you don’t have a Thermomix, this recipe can be done with a pot on the stove and finished with a stick blender.

Broccoli and Potato Soup
Ingredients
- 1 large onion
- 1 clove garlic
- 20 g olive oil
- 400 g broccoli cut into florets with stems peels and cut into 3cm pieces
- 300 g potato peeled, diced into 3cm cubes
- 2 tbsp Thermomix vegetable stock concentrate
- 400 g water
- 100 g milk I used reduced-fat milk
- Salt and pepper to season
Instructions
- Cut onion and garlic for 5 seconds | Speed 5
- Add oil (20g) and sauté with measuring cup (MC) off for 3 minutes | 100C | Speed 1
- Add broccoli and sauté with MC off for 6 minutes | 100C | Speed 1
- Add potato, stock concentrate (2tbsp), water (400g), milk (100g), salt, pepper and cook for 20 minutes | 100C | Speed 1
- Very carefully blend for 1 minute slowly going from Speed 1 to 8

this one sounds great for the upcoming winter months!
Make this one it’s delicious! I didn’t have any stock concentrate in my fridge so used herbamare, (herb salt) plus I used fresh cream instead of milk. Also, I used sweet potato in place of normal potato.
