Lime, Garlic and Chilli Prawns and Vegetables

Welcome to my 101st post!

I’m always looking for new things to steam in the Varoma and this time, I’ve chosen prawns.  This is a quick and easy meal to put together – it might even take more time to chop up the vegetables than it does to cook!  Keep an eye on the prawns towards the end to make sure they don’t over cook.

Lime, Garlic and Chilli Prawns and Vegetables

Servings 4 serves

Ingredients
  

  • 500 g peeled raw prawns with the tail on
  • 2 cloves garlic peeled and minced
  • 2 tbsp lime juice
  • 1 tsp chilli flakes use 1/2 tsp for less spice
  • Salt and pepper to season
  • 1 bunch asparagus trimmed and cut in half
  • 4 cups broccoli florets
  • 2 tbsp extra virgin olive oil to serve

Instructions
 

  • In a mixing bowl, combine prawns, garlic, lime, chilli, salt and pepper together
  • Put 500g of water into the Thermomix bowl
  • Cut a piece of wax or baking paper to cover the Varoma tray and scrunch it up
  • Put the paper on the Varoma tray, put the prawns on top and pull the sides of the paper up to catch any juices when steaming
  • Put the lid on the Thermomix, assemble the Varoma and place it on top
  • Cook for 9 minutes | Varoma | Speed 2
  • Put the vegetables in the Varoma bowl, reassemble the Varoma and cook for a further 4 minutes | Varoma | Speed 2
  • Drizzle with olive oil to serve
