Irish Brown Bread
A nutty, yeast-free bread that's so simple to make. Mill your own whole wheat flour in the Thermomix or use store bought. This rustic loaf is a classic and best served warm or toasted.
- 250 g whole wheat or the equivalent weight in whole wheat/wholemeal flour
- 200 g plain white flour
- 1 tsp baking soda
- 1 tsp salt
- 330 g buttermilk store-bought
- 1 egg
Preheat oven to 200C and grease a loaf pan with vegetable oil
Put whole wheat into the Thermomix bowl and mill for 1 minute | Speed 9
Scrape down the sides, add remaining ingredients into the bowl and mix together for 5 seconds | Speed 7 – the mixture should be like a soft dough
Pour into the loaf pan and even out on the top
Bake in the centre rack for about 40-45 minutes or until a toothpick inserted in the centre comes out clean
Remove from the tin and wrap in a tea towel to cool
- Store-bought buttermilk is thicker than the buttermilk you get from making butter from cream. For this recipe, the store-bought stuff stops the dough from being too runny.
