Caramelized onions are a great addition to any cheese board or to a sandwich. If you’ve ever opened a jar of caramelized onions for a cheese board, and then had them sit in the fridge until they expired, then this recipe is for you! It’s so easy to cook them in the Thermomix that you can just make up a batch any time you need them; while controlling everything that goes in them.

Caramelized Onions
Ingredients
- 200 g red onion peeled, quartered and cut into 0.5cm slices
- 1 clove garlic peeled
- 10 g light olive oil
- 5 g soy sauce
- 15 g balsamic vinegar
- 20 g sugar
Instructions
- Add garlic to the Thermomix bowl and chop for 3 seconds | Speed 7
- Scrape down the sides of the bowl, add onions and oil and cook with the measuring cup (MC) off for 5 minutes | Varoma | Reverse | Speed soft
- Scrape down the sides of the bowl, add soy sauce, vinegar and sugar and cook with the MC off for 15 minutes | 100C | Reverse | Speed soft
- Leave to cool before serving

Did try a chilli jam once, but didn’t have enough sugar so it ended up being more of a chilli sauce!
