Meal for One: Crispy Skin Salmon with Mushrooms and Brussel Sprouts

It’s hard to go wrong when steaming salmon in the Thermomix – so here’s another recipe with a different accompaniment.  I love brussel sprouts and doing them on the stove gives them a lovely toasty flavour.

Meal for One: Crispy Skin Salmon with Mushrooms and Brussel Sprouts

Ingredients
  

  • 200 g salmon fillet
  • 500 g water
  • Light olive oil for cooking
  • 1 clove garlic minced
  • 4 mushrooms halved
  • 4 brussel sprouts outer leaves removed and halved

Instructions
 

  • Place fish on the top tray of the Varoma
  • Put water in the Thermomix bowl, close lid and assemble the Varoma on top
  • Steam fish for 10 minutes | Varoma | Speed 1
  • After 3 minutes, heat oil in a small frying pan on medium-high heat
  • Add garlic and cook for 30 seconds
  • Add brussel sprouts and cook for 3 minutes, stirring occasionally
  • Add mushrooms, turn heat down to medium and cook for another 5 minutes until the brussel sprouts are browned; remove the pan from the heat and put vegetables on a dinner plate
  • When the Thermomix finishes, check the fish and depending on the thickness of the fish, steam for another 1 to 2 minutes
  • Turn the heat on the frying back on to medium-high and place the salmon skin-side down on the pan
  • Cook until the skin is browned and crispy; then remove from heat

Notes

  1. Make it easier to clean up – scrunch up a piece of baking and run under water.  Open up and place under the fish before putting on the Varoma tray – just make sure that all of the holes aren’t covered up so the steam can still come through the tray
