Here is version 2 of the penne and sausage recipe. It is drier than the original with one less can of tomatoes which allows for a concentrated tomato flavour after baking it in the oven.
Penne and Sausage (Version 2)
Ingredients
- 1 large red onion peeled and quartered
- 2 cloves garlic peeled
- 20 g olive oil
- 2 cups wholemeal penne
- 400 g can diced tomato
- 50 g tomato paste
- 20 g Worcestershire sauce
- 2 tsp dried parsley
- 2 tsp dried oregano
- 2 tsp dried basil
- 40 g Thermomix stock concentrate
- 500 g thin sausages I like to use pork sausages
- Salt and pepper to season
- 150 g grated tasty or cheddar cheese
Instructions
- Preheat oven to 180C (350F)
- Cook pasta according to the package instructions
- In the Thermomix, chop onion and garlic with the measuring cup (MC) on for 3 seconds | Speed 5
- Scrape down sides of the bowl, add oil and sauté with the MC off for 3 minutes | Varoma | Speed 1
- Put sausages in the Varoma tray and put the lid on
- Add diced tomatoes, tomato paste, Worcestershire sauce, herbs, stock and 200g of water into the Thermomix bowl, close the lid and put the Varoma on top
- Cook sauce and sausages for 20 minutes | Varoma | Speed 2
- Remove the Varoma and leave sausages to cool slightly
- Taste the sauce, season with salt and pepper as required and then purée for 20 seconds – slowly going from Speed 1 to Speed 7
- Cut sausages into 1.5cm pieces and add to the sauce
- Add butterfly to the Thermomix bowl and add drained pasta
- Mix for 20 seconds | Reverse | Speed 1
- Pour pasta and sauce into a square roasting dish and sprinkle with cheese
- Bake in the oven for about 30-35 minutes, until the cheese is melted and slightly browned
