Here is version 2 of the penne and sausage recipe.  It is drier than the original with one less can of tomatoes which allows for a concentrated tomato flavour after baking it in the oven.

Penne and Sausage (Version 2)

  • 1 large red onion peeled and quartered
  • 2 cloves garlic peeled
  • 20 g olive oil
  • 2 cups wholemeal penne
  • 400 g can diced tomato
  • 50 g tomato paste
  • 20 g Worcestershire sauce
  • 2 tsp dried parsley
  • 2 tsp dried oregano
  • 2 tsp dried basil
  • 40 g Thermomix stock concentrate
  • 500 g thin sausages I like to use pork sausages
  • Salt and pepper to season
  • 150 g grated tasty or cheddar cheese


  • Preheat oven to 180C (350F)
  • Cook pasta according to the package instructions
  • In the Thermomix, chop onion and garlic with the measuring cup (MC) on for 3 seconds | Speed 5
  • Scrape down sides of the bowl, add oil and sauté with the MC off for 3 minutes | Varoma | Speed 1
  • Put sausages in the Varoma tray and put the lid on
  • Add diced tomatoes, tomato paste, Worcestershire sauce, herbs, stock and 200g of water into the Thermomix bowl, close the lid and put the Varoma on top
  • Cook sauce and sausages for 20 minutes | Varoma | Speed 2
  • Remove the Varoma and leave sausages to cool slightly
  • Taste the sauce, season with salt and pepper as required and then purée for 20 seconds – slowly going from Speed 1 to Speed 7
  • Cut sausages into 1.5cm pieces and add to the sauce
  • Add butterfly to the Thermomix bowl and add drained pasta
  • Mix for 20 seconds | Reverse | Speed 1
  • Pour pasta and sauce into a square roasting dish and sprinkle with cheese
  • Bake in the oven for about 30-35 minutes, until the cheese is melted and slightly browned
