Mushrooms on toast is a classic breakfast dish. Mushrooms have a ‘meatiness’ about them that makes them feel a bit more substantial than most vegetables. Yes, sautéing mushrooms is something that can easily be done in a frying pan on the stove, but since I have a Thermomix, I had to give it a go. This recipe is the result.
While the dish is designed for quick and easy breakfasts, there are plenty of ways to jazz it up – like using different types of mushrooms, adding some fresh herbs, or topping it with an egg or crumbled goats cheese.

Mushrooms on Toast
Ingredients
- 1 shallot peeled and halved
- 1 clove garlic
- 20 g olive oil
- 8 mushrooms sliced into 1cm pieces
- Salt and pepper to season
- 2 slices multi-grain, wholemeal or sourdough bread
- Extra virgin olive oil to serve
Instructions
- Put shallot and garlic into the Thermomix bowl and chop with the measuring cup (MC) on for 3 seconds | Speed 5
- Scrape down the sides of the bowl, put oil (20g) into the Thermomix and sauté with the MC off for 2 minutes | Varoma | Speed 1
- Put mushrooms, salt and pepper into the Thermomix bowl and sauté with the MC off for 5 minutes | Varoma | Reverse | Speed soft
- Toast bread, top with cooked mushrooms and drizzle with extra virgin olive oil
