Baked Beans

Baked beans are great for breakfast – filling and a serve of vegetables too.  Canned beans are convenient, but full of salt and sugar.  I looked at a lot of recipes to see what the flavourings were and to find an option that didn’t use sugar.

This recipe is based on one I found on the Recipe Community website.  I’ve also caramelized the onions to provide the sweetness that normally comes from sugar.

Baked Beans

Make your own baked beans to avoid the sugar and salt in canned versions. This is a chunky version made in the Thermomix.
Course Breakfast
Servings 4 serves

Ingredients
  

  • 1 large onion peeled, quartered
  • 2 cloves garlic
  • 20 g olive oil
  • 1 tsp smoked paprika
  • ½ tbsp Thermomix stock concentrate
  • 2 tbsp tomato paste
  • 400 g can diced tomatoes
  • 400 g can cannellini beans
  • Salt and Pepper to season

Instructions
 

  • Chop onion and garlic in the Thermomix for 3 seconds | Speed 5
  • Add olive oil and sauté with measuring cup (MC) off for 10 minutes | 100C | Reverse | Speed 1
  • Add paprika and sauté with MC off for 3 minutes | 100C | Reverse | Speed 1
  • Add stock, tomato paste and diced tomatoes and cook with MC tilted on its side for 10 minutes | 100C | Speed 1
  • Add beans, salt and pepper and cook with MC tilted on its side for a further 10 minutes | 100C | Reverse | Speed soft
