The act of baking potatoes with cheese is actually a more varied topic than you might think. The humble potato bake is also known as scalloped potatoes, potato gratin, gratin Dauphinoise, gratin Savoyard – but they are all slightly different. 

Potato gratin or scalloped potatoes involve just potato and cheese, while the Dauphinoise uses cream and the Savoyard uses stock. This recipe is based on the Savoyard approach and uses sweet potatoes to make it a bit healthier.  

In some recipes, the Thermomix does all the heavy lifting.  In this one, I use the Thermomix to make the sauce components and then partially cook the potatoes in the Varoma.  The dish is finished in the oven to fully cook the potatoes and to get that gooey melted cheese that we all love.

Sweet Potato Bake

This is your classic potato bake made with sweet potato. This recipe uses a stock-based approach instead of milk or cream. The Thermomix helps with partially cooking the potatoes and creating the sauce. It's all finished off in the oven for that melted cheese flavour we all love.

Servings 4 serves

Ingredients
  

  • Light olive oil for greasing
  • 150 g reduced fat tasty or cheddar cheese cut into 1.5cm pieces
  • 1/2 onion peeled and quartered
  • 1 clove garlic peeled
  • 30 g Thermomix vegetable stock concentrate
  • 600 g sweet potato peeled and cut into 2mm slices
  • Salt and pepper to season

Instructions
 

  • Preheat oven to 220C (425F) and grease a 1L oval pie dish with olive oil
  • Put cheese into the Thermomix bowl and grate with the measuring cup (MC) on for 6 seconds | Speed 8; remove to a mixing bowl
  • Put onion and garlic into the Thermomix bowl and chop with the MC on for 3 seconds | Speed 5; add to the bowl with the cheese, season with salt and pepper and stir to combine
  • Add stock concentrate and 300g of water into the Thermomix bowl and close the lid
  • Put the sweet potato into the Varoma bowl and tray; keeping some of the holes clear for the steam to get through
  • Assemble the Varoma on top of the Thermomix and cook for 15 minutes | Varoma | Speed 2
  • Carefully layer half of the potatoes in the roasting dish and top with half of the cheese, onion and garlic mixture
  • Slowly pour the liquid in the Thermomix over the potatoes and cheese
  • Layer the remaining potato and spread the remaining cheese mixture evenly on top
  • Bake uncovered in the middle shelf of the oven for 25-30 minutes or until the potatoes are cooked through and the cheese is golden brown
